In many of my pan bread recipes, I use the pan’s structure to maintain higher dough hydration, producing softer bread. Sometimes I increase the ratio of ingredients because the pan provides additional support. Before adapting a pan recipe for free-form baking, carefully check the ingredients: does the dough rely too much on the pan’s support due to high hydration? If needed, reduce the liquid or adjust ingredient ratios to stabilize the dough.
